Ingredients
Mousse:
750g Japanese type cucumber
1 package (12g) colorless gelatin
5 tablespoons water
½ cup (100g) plain yogurt
1 tablespoon (10g) fresh mint, chopped
½ cup (125g) mayonnaise
Salt and black pepper
Turkey breast sticks:
150g turkey breast, sliced (about 12 slices)
7 units Magic Toast
Makes 12 servings
Preparation time: 15 minutes
Fridge time: at least 8 hours
Tip: Give preference to yogurt with firm consistency.
Directions
Mousse:
- Peel the cucumbers and cut them into slices. Sprinkle salt and leave them in a sieve or colander draining for 1 hour.
- Hydrate the gelatin in water and cook in a water bath to dissolve completely.
- In a blender, add half the cucumber, yogurt, mint and mayonnaise. Beat well.
- Add the remaining cucumber gradually and keep on beating until it reaches a smooth texture.
- Remove the mixture from the blender and add the dissolved gelatin slowly. Season with salt and pepper.
- Grease with oil and moisten the pan with water with about 1 liter of capacity. Pour the preparation and refrigerate until the next day.
Turkey breast sticks:
- Cut each turkey breast slice into 4 strips.
- Cut each Magic Toast in 3 (use a bread knife). Wrap the turkey breast strips on the Magic Toast sticks.
- Unmold the mousse and serve with the Magic Toast sticks.
